We work together to offer you the finest in food preparation, wine pairing and delightfully personal service. Though my team will fluctuate depending on the scope of the work, we are all committed to excellence.
Nelles is a member of Canadian Culinary Federation. The formal dining room manager at the Aerie Resort, she has worked at the Lieutenant Governors House and has 20 years experience in the food and beverage industry.
Pam is a passionate sommelier who has worked for over 10 years for fine dining establishments such as Eden, Sooke Harbour House and Paprika Bistro.
Jan has four years of fine dining experience and a creative sense of style – he was a Chef de Partie at the Aerie Resort where we worked together. He is also a dedicated mushroom forager, part owner of Urban Omnivore, providing the wild morels and chanterelles and more that we use in our menus.
Charlie has spent the last 2 ½ years as my apprentice chef. He has a solid work ethic, pays attention to detail, and is very driven. He reminds me of myself when I was his age.
