By the time summer arrives, my kitchen is in full swing. It’s a busy time and coincides with the peak of the growing season. It’s a great time to go to the Farmers Markets for blackberries, corn, summer squash, raspberries, figs, peaches, and yellow plums.Another delight is the Heirloom tomato! With a little bit of heat, the acid in the tomato turns into natural sugar and all you need to do is season with salt and pepper, balsamic, olive oil and garnish with basil. It makes my mouth water just thinking about it...let alone tasting it.The surrounding waters bring lots of fresh seafood to our plates! Some of my favourites are Sockeye Salmon, Rockfish, and Qualicum Bay Scallop. But nothing beats catching your own trout from Sooke — fishing is a pastime I enjoy dearly.
